and nonna's across Italy have most definitely mastered that art.
Mamma is 90 years young and she's had over 80 years of experience making the very dishes that she learned from her mamma (my nonna) that she in turn learned from hers.
That's almost 200 years of lessons in just three generations, and every one of them was taught intuitively.
To know what to select (especially in times of making do) how to prepare, trusting senses for cook times and being able to masterfully create beauty for several people from small spaces with no excuses.
This is what I share with you - through my more than 45 years
experience in various Italian kitchens.
